Maximum flexibility within the areas was essential. We provided three working kitchens, a network of interlocking coldrooms, a walk-in blast chiller, self-cooking centres and remote viewing facilities to support the varying hospitality requirements. With high volumes of fresh produce prepared on-site, effective storage and preparation was key.
